Crispy Potatoes with Yellow Sauce

Who doesn't love a freshly baked crispy potato? When you top those lovely potatoes off with a generous drizzle of our Yellow Sauce, Salsa Amarillo, those delicious potatoes become a dish all their own. The combination of the crispy potato texture with the creamy and slightly sweet and spicy sauce create a perfectly scrumptious blend.

For a yummy crispy potato do as follows:

PREP TIME: 10 minutes  

COOK TIME: 30 minutes

INGREDIENTS

  • 2 pounds fingerling potatoes, halved lengthwise
  • 4 tablespoons olive oil
  • Salt & pepper to taste
  • Chopped cilantro to taste (optional)

Boil halved potatoes for about 3 to 5 minutes until fork tender. Drain well and allow to dry. Preheat oven to 425°F. Drizzle olive oil on a baking sheet and transfer and arrange potatoes. Drizzle a bit more olive oil over top the potatoes and sprinkle with salt and pepper. Roast the potatoes for about 25-30 minutes or until crispy, turning potatoes about midway. 

Drizzle a generous amount of Peruvian Gourmet Yellow Sauce over top the roasted potatoes. Add chopped cilantro if desired.
