Lomo Saltado
The famous Lomo Saltado, a Peruvian food classic, although it's origins are not purely indigenous. Peruvians were influenced by Chinese immigrants in the 19th century and it was by the melding of two cultures that the tasty dish was spawned.
Today, the Lomo Saltado is known as Peru's National Dish. The delicious stir fry is a mix of beef, tomatoes, and onion served with white rice and french fries, which makes it a hearty meal that's like an explosion of contrasting colors, tastes, textures, and flavors.
PREP TIME: 60 minutes
COOK TIME: 20 minutes
- 1 lb sirloin steak cut in thin slices
- 2 garlic cloves, minced
- Salt (as salty as you wish)
- Pepper to taste
- 3 tablespoons vegetable oil
- 1 small red onion cut in thick slices
- 2 plum tomatoes cut in thick slices
- 1 seeded and ribbed Aji Amarillo (yellow) chili pepper cut in thin slices
- 2 tablespoons soy sauce
- 3 tablespoons red wine vinegar
- 1/3 cup beef stock
- 1/2 -cup fresh cilantro, coarsely chopped
- About 2 cups white rice (steamed)
- About 2 cups crispy french fries of your choice (home made is always best)
- Peruvian Gourmet Green Sauce
Begin by rubbing the steak with salt and pepper before cutting steak into thin slices (about 2 inches). Place steak slices into a bowl, add minced garlic, vinegar, and soy sauce and leave to marinate (atleast 15 minutes).
Put a large pan or wok to heat and add oil. Transfer meat to the hot pan, leaving the marinade to the side, and sear the meat (you will need the marinade later).
Once meat is seared add sliced onion, sliced tomatoes, and sliced Aji Amarillo to the pan. Cook until soft and then add the leftover marinade. Mix and then add beef broth. Let it simmer for atleast a few minutes and then remove from heat. Add your french fries and give it a toss.
Drizzle a generous amount of Peruvian Gourmet Green Sauce over top for optimal flavor. Serve with white rice and enjoy!
