Pasta Salad with Olive Sauce

This pasta salad dish is served cold and is oh so fresh. It can be paired with meat or seafood or served as a meal on its own. A generous topping of our Olive Sauce adds a creamy addition of deliciousness.

COOK TIME: 20 minutes

INGREDIENTS

  • 1/2 pound bowtie pasta
  • 1/2 cup red onion chopped
  • 1/2 cucumber cut into crescents
  • 2 tablespoons lime juice
  • 3 tablespoons chopped parsley
  • 3 tablespoons chopped cilantro
  • 3 tablespoons crumbled goat cheese
  • salt to taste

Bring water to a boil in a pot and add salt to your liking as well as bowtie pasta. Cook until pasta is tender and drain. In a large bowl mix lime juice, onion, chopped parsley and salt. Let it sit for 2 minutes so flavors will meld. Once it has sat, add pasta and cucumber crescents. Mix together.

Drizzle over top Peruvian Gourmet Olive Sauce. Add chopped cilantro and goat cheese crumbles.
